How to make your own Jerk Chicken At Home

Ingredients

  • 2 lbs chicken thighs, bone-in and skin on
  • 1 tablespoon jerk seasoning
  • 1 teaspoon brown sugar
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon scotch bonnet pepper
  • 1/4 cup soy sauce
  • 3 tablespoons vegetable oil
  • 2 tablespoons lime juice
  • 1 tablespoon white vinegar
  • 1/2 onion, diced
  • 4 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  1. In a blender or food processor, combine the jerk seasoning, brown sugar, allspice, thyme, cinnamon, cayenne, soy sauce, vegetable oil, lime juice, vinegar, onion, garlic and salt and pepper. Blend until smooth.
  2. Place the chicken thighs in a baking dish and pour over the jerk marinade, mix it in well to coat evenly. Cover and refrigerate for at least 2 hours or overnight.
  3. Preheat oven to 375°F. Bake chicken for 45-60 minutes, until completely cooked through and juices run clear. Baste occasionally with the pan juices.or you can use a grill or jerk drum
  4. Serve hot over rice and peas. Enjoy!
